Ackee and Saltfish

| |
| 1 kg. salted cod |
| 2 tablespoons cooking oil |
| 1 Onion, chopped |
| 2 Spring Onion stalks, chopped |
| 2 teaspoons Sunrite Crushed Red Pepper |
| 2 cloves Garlic, crushed & chopped |
| 3 sprigs Thyme, finely chopped |
| 2 Tomatoes, chopped |
| 2 cans Ackees, drained |
| Salt and Pepper to taste |

| Boil salted cod to remove excess salt. Allow to cool and separate into flakes.
You can often find tinned Ackee in ethnic shops. If you can't find Ackees then an interesting variation can be made by substituting lightly scrambled egg. |

| Heat oil in a large frying pan, add onion, spring onion, hot sauce and garlic. Fry over low heat until onion is transparent, add fresh thyme. Add Saltfish and fry, stirring constantly for 3 minutes, then add tomatoes and ackee. Toss gently so as not to break up ackees. Sprinkle with black pepper before serving. |
